This delicious soup is a summer fav of ours!
1 pound of mixed mushrooms sliced (baby bella, cremini and wild mushrooms) 1 large onion slices
4-6 tablespoons of butter
1 tablespoon of paprika
1-2 tablespoons of tomato paste
1 tablespoon of fresh chopped parsley 3-4 cups of vegetable or chicken stock Salt, pepper to taste
sour cream for garnish
How to make:
Melt butter in a large sauce pan over medium heat
Add onions and cook until translucent
Add mushrooms increase heat and cook until liquid evaporates and mushrooms are nicely caramelized (approximately 15 min)
Add paprika, tomato paste, salt, pepper and cook for 5 min
Add stock and after bringing to boil reduce heat to simmer. Cook for 10 minutes.
Serve with parsley and sour cream
