GAZPACHO SOUP
This delicious soup is a summer fav of ours!
Ingredients:
2 lbs ripe tomatoes
1 small cucumber
1 med bell pepper
1 vidalia or sweet onion
2-3 garlic cloves
1/2 cup fresh basil
1/2 cup of extra virgin olive oil
2 tbsp of red wine vinegar
1/4 tsp black pepper
1/4 tsp salt
How to make:
- Core tomatoes and set aside some juicy seeds in a small bowl
- Cut tomatoes into large chunks and place into a large bowl
- Cut cucumber and bell pepper into large chunks
- Finely chop 1/4 of cucumber and bell pepper and set aside together with tomato seeds for garnish
- Chop onions into large chunks and place into large bowl
- Add basil, garlic, olive oil, red wine vinegar, salt and pepper
- Blend in a food processor or with a hand held blender until smooth
- Chill soup and garish in the refrigerator for 2 hours
- Add salt and pepper to taste if needed
- Serve topped with garnish
