GAZPACHO SOUP

This delicious soup is a summer fav of ours!

Ingredients:

2 lbs ripe tomatoes
1 small cucumber
1 med bell pepper
1 vidalia or sweet onion
2-3 garlic cloves
1/2 cup fresh basil
1/2 cup of extra virgin olive oil
2 tbsp of red wine vinegar
1/4 tsp black pepper
1/4 tsp salt

How to make:

  1. Core tomatoes and set aside some juicy seeds in a small bowl
  2. Cut tomatoes into large chunks and place into a large bowl
  3. Cut cucumber and bell pepper into large chunks
  4. Finely chop 1/4 of cucumber and bell pepper and set aside together with tomato seeds for garnish
  5. Chop onions into large chunks and place into large bowl
  6. Add basil, garlic, olive oil, red wine vinegar, salt and pepper
  7. Blend in a food processor or with a hand held blender until smooth
  8. Chill soup and garish in the refrigerator for 2 hours
  9. Add salt and pepper to taste if needed
  10. Serve topped with garnish
